Jalapeno Burgers | Broccoli Slaw | Sweet Potato Fries

I thought there may be some interest in the the recipes for my menu plan. Like I said this week is fairly simple. Quick and easy meals to get on the table. Easy clean up. 


Jalapeno Burgers
  • 1-2 jalapeno peppers, chopped, ribs and seeds removed (leave some seeds if you like it really spicy)
  • 1 tbsp creole seasoning (I use Tony Chacheres' Original Creole Seasoning )
  • 1 tbsp garlic powder 
  • 1 lb ground beef ( or ground chicken, turkey, bison, etc )
  • Burger buns
  • Cheese (we like pepper jack on these)
  • Fixins' (whatever your little heart desires!)
Preheat grill. Mix together first three ingredients in a bowl. Add beef and combine with seasonings. Do not over mix your beef. Wet your hands with cold water to keep the beef from sticking to you. Form your patties. Throw them on the grill.

Broccoli Slaw (Trader Joe's style)
This is the recipe on the back of the TJ's Broccoli slaw. We love it and it's easy and goes great with spicy food since it is a sweet slaw.
  • 1 bag Broccoli Slaw
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup Walnuts, chopped
  • 1 cup apple, diced
  • 1 cup TJ's Poppy seed dressing (or dressing of your choice)
I mix all this in a big tupperware bowl, because after we serve the food leftovers are ready to go straight to the fridge.


Sweet Potato Fries 
I buy the bag of fries at TJ's. They are delicious and simple to make. I follow the instructions on the back.
