Grilled Pork Chops | Roasted New Potatoes | Corn on the Cob


Dinner was good. I used the grill for the pork chops and the potatoes. I had planned to roast the potatoes in the oven but decided I would just add them to the grill and keep the kitchen clean.

Grilled Pork Chops
No real recipe for this one. I just marinaded the pork chops with a little extra virgin olive oil and an herb blend. I bought this herb blend at the farmers market last year and I have loved using it with everything!


Here's a list of the dried herbs in the blend: Thyme, Dill, Rosemary, Oregano, Basil, Parsley, Red Pepper, Garlic, Kosher Salt, Cracked Pepper. Just in case you want to make your own herb blend!


Roasted New Potatoes
I made a big foil packet for these, so that I could put them on the grill. I added an ice cube to the pack so that the potatoes would steam a bit, we wanted tender not crunchy. Drizzled some olive oil and added the same herb blend (because really, I could eat that on everything).

Corn on the cob and a nice salad rounded out the meal!

We have been eating on the back patio most nights. I love eating outside. The weather is great here for al fresco dining. I can't wait to add little umbrella lights for my patio set and some potted plants.
