Asparagus and Gouda Mini Pizza's | Salad


After last nights flop it was nice to have a quick and tasty dinner tonight! This is a really easy dinner. It's fun because you can still have everyone create their own but not as messy as rolling out dough.

Sometimes I use pita bread for mini pizza's and sometimes I use Naan. Trader Joe's sells a delicious plain Tandoori Naan bread in their freezer section. Four come in one package, which is perfect for our family.

I had planned this as a veggie only night but my husband spied some salami in the fridge so I had to add some to the topping choices. David's pizza ended up being mainly salami and cheese with a few asparagus tips. 

Mini Pizza's with Trader Joe's frozen Naan:
  • Extra-Virgin olive oil
  • Garlic powder
  • Crushed red pepper flakes (if you want it spicy)
  • Sea salt and cracked pepper
  • Gouda cheese block, cut in very thin slices
  • Trader Joe's grilled asparagus (it's in the frozen aisle), warmed up in the microwave
  • Sliced tomatoes
  • Sliced mushrooms
  • Sliced Salami
  • Anything else you want on your pizza!
Preheat your oven to 400 degrees. Lay out your frozen Naan (or pita bread) and brush each piece with a little olive oil. Add a sprinkling of garlic powder and crushed red pepper flakes (if you are using). Start by laying your veggies on top of the Naan. Then add the sliced Gouda, we used three very very thinly sliced pieces to each pizza. Put the pizzas in the oven on a baking sheet or baking stone and cook for about 5-8 minutes until all the cheese is melted and bubbly. Pull out of the oven and add some fresh cracked pepper and a little bit of salt. 

Throw all the leftover veggies with some lettuce to make a side salad. Enjoy!
