Pork Chops | Grilled Polenta | Roasted Tomatoes and Zucchini

Pork Chops
Just basic grilled pork chops. Pork chops are great because they can take on soo many different flavors and be extraordinary! No need to bake or fry your pork chops. 
  • A little olive oil
  • Italian herbs: Oregano, Thyme, Basil, Dill, Rosemary, Parsley, Red Pepper, Garlic Powder, Sea Salt, Cracked Pepper.
Preheat grill to medium-high heat.

In a bowl mix together a bunch of your favorite herbs and seasonings. If you are using dried use less, fresh use more...but go easy on the rosemary (you don't want your food to taste line Pine-sol). Brush olive oil onto the pork chops. Take the herb blend and apply liberally to your pork chops; front and back.

Grill for 8-10 minutes depending on thickness. Don't overcook that's why pork chops get rubbery.

Grilled Polenta
You can make fresh polenta and set it in the fridge overnight and then make slices which is delicious, don't get me wrong. I just don't want more dishes to clean. So buy the already made polenta in a little tube. I love Trader Joe's Organic polenta. There are no mysterious ingredients just plain organic polenta ready to be grilled/baked/seared at a moment's notice.

I pulled the tube out of the pantry and made a bunch of slices about a 1/2 inch thick. Brushed a little olive oil on it and then threw it on the grill. I left it on for around 10 minutes and then turned it over for three more minutes and added a very thin slice of mozzarella cheese.

Roasted Tomatoes and Zucchini
Easy roasted veggies. Cut the veggies about the same size. Toss with a bit of olive oil; season. Lay out on a cookie sheet in one layer. Cook at 400 degrees for about 15-20 minutes. I wish I would have drizzled some Balsamic vinegar on top of the veggies this would of been a nice dimension for the meal.

I always prep veggies first and put them in the oven before I start the rest of the food, if I am roasted them. 

No pool tonight. No weights. Resting. Will be up and running tomorrow!
