Pumpkin Spice Latte Recipe

I tried this recipe today because I was totally craving a pumpkin spice latte but didn't want to leave my house. This was good and it hit the spot, plus I had plenty of the milk mixture leftover. I plan on making myself a pumpkin spice tea latte in a minute! I'm going to try it with the new Vanilla & Cinnamon black tea from Trader Joe's.

Pumpkin Spice Latte

makes 1-2 servings
Ingredients:
2 cups milk 
(try using almond milk for a vegan alternative or just because :) )
2 Tbsp canned pumpkin 

2 Tbsp sugar
(I use organic Turbinado raw cane sugar)
2 Tbsp vanilla extract (yes, two tablespoons)
1/2 tsp pumpkin pie spice
1-2 shots espresso (about 1/4 cup of espresso or 1/2 cup of strong brewed coffee if you don't have an espresso machine.)


Directions:
In a saucepan combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don't have a blender, don't worry about it - just whisk the mixture really well with a wire whisk.
Pour into a large mug or two mugs. Add the espresso on top. 
Optional: Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.

P.S. I used this with the Vanilla & Cinnamon Black tea from Trader Joe's and it was delicious!! I think I may even like it better than with coffee.
