Mahi Mahi Burgers | Sweet Potato Fries

Dinner was quick, easy and delicious! I picked up the frozen Mahi Mahi burger patties at Trader Joe's last week, and they were goood!

The sweet potato fries take the longest to cook, they are from Trader Joe's too.  Heat oven to 425 and cook for 18-22 minutes. Fire up the grill and throw the Mahi Mahi on for 3-4 minutes per side, squeeze a lime over the tops of the burgers when finished. We put the whole wheat burger buns on the grill too.

For the fixins': Shredded cabbage, avocado slices, diced tomatoes and a white sauce.

Dressing:
  • 1/4 cup mayo (I use full fat, enjoy the good stuff!)
  • 1/4 cup plain yogurt
  • 1 lime, juiced
  • A couple dashes of tabasco sauce
Whisk together ingredients in a small bowl. Use as a fixin' on your fish burgers or fish tacos. Yummy!

This was a great summer dinner, easy clean up. You don't have to make everything from scratch to have a great meal. Watch the ingredients of your prepared items, make sure you can pronounce all the ingredients. Take prepared items like the Mahi Mahi burgers and add your twist to it, that's what will make it special.
