Greek Salad for lunch...Mmmmm

Today I invited a new friend over for lunch and decided to make a Greek Salad with fresh pita bread. It was great getting to know her a little better over lunch. I love having people over for a meal or even just coffee.


Not being sure what a guest may like to eat can sometimes cause stress when figuring out what to serve, try not to stress and remember that inviting someone over is a time to get to know them better not an Iron Chef competition. Make something easy that you have made a million times even if it's not all that impressive. It's also great to make something buffet style so that your guest can pick and choose what they please and not feel bad about passing up or suffering through something they don't like.


As you can see this was a very casual lunch, I didn't even transfer the food to serving dishes (slacker) I just kept everything on the cutting boards.

Here's what I laid out:
  • Romaine lettuce
  • Halved mini-heirloom tomatoes 
  • Sliced cucumber
  • Artichokes with stems quartered
  • Kalamata olives
  • Feta Cheese
  • Chopped Chicken-Marinated w/ olive oil, lemon juice, garlic, oregano, thyme, salt and pepper.
  • Whole wheat couscous
  • Hummus
  • Fresh Pita
  • Trader Joe's Greek Style feta dressing
I can see a Greek wrap in my future!
