Vegetarian Friendly Grilled Tex-Mex Pizza | Salad

This is inspired by the BLT pizza at California Pizza Kitchen I had years ago. I loved that pizza soo much because it had lightly dressed salad on top of the pizza! Delicious.

Since summer is here you will most likely see a lot of grill friendly recipes on this blog. If you don't have a grill no worries, just use your oven.


Vegetarian Friendly Grilled Tex-Mex Pizza with Salad on top

  • Pizza Dough (make your own, buy some at TJs, or use the artisan dough if you have some in your fridge)
  • Cornmeal
  • BBQ Sauce (I use TJs Bold and Smoky)
  • 1 can Organic Black Beans (go organic it's about 15 cents more), drained and rinsed
  • 1/2 cup Organic Sweet Corn, thawed
  • 1/4 cup or less Cotija Cheese, grated  (or you could use a shredded mexican blend)
  • Season with Garlic Powder, Salt, Cracked Pepper
  • Half a head of Green leaf or Romaine lettuce, washed and chopped
  • 2  Roma tomatoes
  • 2 tblsp Ranch Dressing
  • Season with garlic powder, a dash of cayenne pepper and cracked pepper
  • 3 tblsp milk
Preheat Grill right around 400 degrees.  Take a pizza peel and dust with cornmeal. Dust your counter with a little bit of flour and work your dough into the shape you want it. Put it on the pizza peel. Make sure you coated it with the cornmeal otherwise it will stick. 

Depending on how saucy you like your pizza, spread some bbq sauce on top of the dough. I use about 1/8 cup of bbq sauce spread evenly.  Sprinkle black beans and then sweet corn evenly on dough. Season with garlic powder, salt and pepper. Now grate the Cotija cheese on top of the pizza.

In a quick motion slide the pizza onto the preheated grill. I like to turn off the side of the grill that the pizza is on so it doesn't burn the bottom. The pizza will be done in 7-9 minutes or less depending on how hot your grill is and how thick you layered your pizza. 

While the pizza is cooking grab a small bowl and put the ranch and seasonings in it. Whisk together with milk to thin. Toss lettuce, tomatoes and dressing together. Set aside.

Use your pizza peel to remove the pizza from the grill. Cut into desired pieces. With tongs place tossed salad on top of pizza evenly. Enjoy!
